Gluten Free Party Cakes: This Gluten Free Christmas Cake With Cranberries takes several hours to cook. It is simply wonderful. The alternatives to wheat flour add to the flavour of the cake and make it very nutritious and rich in protein. The dried cranberries in the cake give it a unique crisp and tart flavour which is a nice surprise in a very sweet, rich Christmas Cake.Recipe For Cranberry Fruit Cake – Gluten Free 1 cup of dried cranberries 1 cup dried chopped dates 2 cups sultanas 2 cups of chick pea flour, also called besan flour 1 cup soy flour 1 cup arrowroot flour 2 teaspoons baking powder 1 tsp ginger root powder1/2 tsp allspice 1/4 tsp cinnamon 1 tsp finely grated orange rind. 3/4 lb butter – about 340 gm, or 3/4 of an average sized block of butter. 500 gm of rich dark brown sugar 2 tbsps golden syrup 6 organic free range eggs Method: First, pre heat the oven to 200 C. Cream the butter and sugar and golden syrup. Chop the butter up a bit first, and have it at comfortable room temperature to make the mixing easier. Add the eggs, one at a time. Next, put the gluten free flours, baking powder, and spices into the butter mixture. Stir this in, then add the chopped dates, the whole dried cranberries, and the sultanas. Now grease a glass dish or cake tin. I like to use a pyrex dish which is about 8 inches long and 5 inches wide. After greasing the dish or tin, place butter paper, or greased cooking paper, into the tin. Use a couple of butter papers so that most of the side of the dish is covered with the paper.Now – pour your beautiful gluten free cranberry christmas cake into the cooking dish. Pop into the oven. Reduce the heat immediately to 150C. Cook for one hour, then reduce the heat to 100C and cook a further 2 hours. Leave the cake in the glass dish until you are ready to use it on Christmas Day. If you have used a tin, then remove the cake from the tin, as this will taint the cake. But leave the butter paper on the cake, as this keeps the cake moist. Wrap the cake and put into an air tight tin.
